You are spot on. Coffee does not like moisture which can come from changes in temperature such as those that come when you take your coffee out and put it back in again. Storing coffee in the back of a cool cupboard is effective at keeping the coffee at the right temperature without risking too much exposure to light / moisture / high or low temps.
